Hummus
1 (15 oz.) can garbanzo beans, drained
½ cup tahini
Juice of 1 lemon
1 tbs olive oil
1/3 cup water
4 cloves garlic, optional
1 tsp cumin
Salt and pepper to taste
- Combine the beans, tahini, lemon juice and olive oil in a blender or food processor and process until smooth.
- Add water a little at a time until you reach the desired consistency.
- Add the garlic and cumin, and then salt and pepper to taste.
- Serve with pita.
As an alternative, substitute garbanzo beans with 2 cans black beans, lime juice instead of lemon juice, and ¼ cup cilantro.
