Turkey Apple Potpie

¼ cup chopped onion
1 tbs. butter
2 cans (10 3/4 oz. each) condensed cream of chicken soup, undiluted
3 cups cubed cooked turkey
1 large tart apple, cubed
1/3 cup raisins
1 tsp. lemon juice
¼ tsp. ground nutmeg
Pastry for single-crust pie (9 in.)

  1. In a saucepan, saute onion in butter until tender.
  2. Add the soup, turkey, apple, raisins, lemon juice and nutmeg; mix well.
  3. Spoon into an ungreased 11×7x2-in. baking dish.
  4. On a floured surface, roll pastry to fit tip of dish. Cut vents in pastry using a small apple cookie cutter.
  5. Place over filling; flute edges.
  6. Bake at 425° for 25-30 min. or until crust is golden brown and filling is bubbly.

Alfredo Sauce

4-6 tablespoons unsalted butter
1 cup half and half
1 cup freshly grated parmesan
1/4 teaspoon salt
pinch nutmeg

  1. melt butter in large saucepan (large enough to hold pasta later)
  2. add half and half to melted butter and heat through
  3. add cooked pasta, toss then remove from heat
  4. add cheese, toss until cheese melts
  5. add salt/pepper and nutmeg and toss

You can add chopped cooked chicken or sauteed mushrooms to finished dish.
You can also add broccoli or spinach to pasta while boiling.

Cajun Shrimp

2 tsp. papkrika
1 tsp. dried thyme
½ tsp. salt
¼ tsp. ground nutmeg
¼ tsp. garlic powder
1/8 to ¼ tsp. cayenne powder
1 tbs. olive oil
1 lb. uncooked medium shrimp, peeled and deveined

1. In large skillet, saute the paprika, thyme, salt, nutmeg, garlic powder and cayenne in oil for 30 sec., stirring constantly.

2. Add shrimp, saute for 2-3 min. or until shrimp turn pink, stirring occasionally.
